Easy Recipes – Sweet and Spicy Chicken

Looking for a home-cooked meal but have zero time and energy?  Well, it seriously doesn’t get any easier than this – only 3 ingredients and less than 2 minutes to throw it together!


  • 1/3 – 1/2 jar of Apricot Jam
  • 1 large jar of salsa (chunky salsa works best)
  • 3-5 chicken breasts

Pour salsa into a small bowl and add 1/3 of the jar of apricot jam.  Mix together well and taste the mixture.  It should have a slight hint of sweetness.  If you can’t taste the sweetness, continue adding teaspoons of jam until it tastes slightly sweet.


Place chicken breasts in a baking dish and cover with salsa mixture.


Bake at 350F for 30 minutes or until chicken is fully cooked.  Serve with rice and a veggie.  Make sure you pour some of the sauce over your rice as well.  That’s it! Enjoy!
