I think people shy away from making fajitas because it seems time-consuming, but this recipe only takes about 35 minutes, including cooking time. Fajitas are relatively low-calorie, but if you want to make it even healthier, opt for whole-wheat tortillas, low or non-fat sour cream and low-fat cheese. Or skip the sour cream and cheese altogether and just use salsa instead!
- 3-5 chicken breasts
- 2-3 bell peppers
- fajita seasoning mix (we prefer Old El Paso)
- olive oil
- 1/4 cup water
- toppings (cheese, sour cream, salsa, etc)
Start by slicing your bell peppers and onion. I like a lot of veggies, so I use a green, red and yellow bell pepper and one onion. The recipe on the seasoning packet only calls for one onion and one green pepper, so you can’t go wrong either way.
After you’ve sliced the veggies, cut up the chicken. I typically cut them in strips about the length and width of my finger. This entire step usually takes about 15-20 minutes.
Pour a small amount of olive oil in two pans and allow to heat before adding your chicken and veggies. There are two different ways to cook these; I prefer to cook both simultaneously in separate pans so the peppers are tender and the onions are almost caramelised. The other option is to cook the chicken first, then add the veggies to the same pan. Less clean up, but I always feel like I’m overcooking the chicken if I allow enough time for the veggies to get tender. Depending on the thickness of your chicken, this step will probably take about 6-8 minutes.
Once your chicken and veggies are cooked to the desired tenderness, combine and add your fajita seasoning with 1/4 cup of water. Stir well. Add up to an additional 1/4 cup of water if needed.
Cover and simmer for a couple minutes to ensure the seasoning has fully covered the chicken and veggies.
Uncover and stir well. The sauce should be thickening up a bit. Let mixture cook uncovered for a few more minutes.
In meantime, set out your tortillas, sour cream, cheese, salsa and anything else you’d like to add.
**TIP: in order to get the tortillas warm but not hardened on the edges, place the desired number of tortillas on a microwave plate and cover with a damp paper towel. Heat for 30 seconds. If you have more than 4 tortillas, you may need to heat 35-45 seconds.
